Vegan Apple Crumble Cupcakes and more..

 I cooked up a storm today, it felt amazing! 

Some super simple vegan yum yums, Apple Crumble Cupcakes and Avocado Chocolate Fudge. I went to the market and sourced some buttery, fresh organic avocados for the fudge and they were worth it!

Vegan Apple Crumble Cupcakes!

You will need:

For the cupcakes:

Dry ingredients:
2 1/4 cups flour

1/2 cup brown sugar
1/2 tsp salt
1 Tbsp baking powder
1 tsp cinnamon

Wet ingredients:
2 cups soy milk

3 Tbsp vegetable oil
1 1/2 tsp vanilla

2 apples, cored, peeled and grated.

For the crumble top:
1 cup flour
1/2 cup brown sugar

6 Tbsp margarine
1/2 cup rolled oats
1/4 cup dessicated coconut.

How to:
- Preheat your oven to 160C, line two cupcake trays with patty pans.
- Make your crumble first by mixing all the ingredients together by hand. Bring everything together until it resembles, well, a crumble and then set aside.
- Make your cupcakes next. In a large bowl, mix together dry ingredients.
- In a separate bowl, mix together the wet ingredients, except the grated apple.
- Add the wet ingredients to the dry ingredients and mix well. Add the grated apple to the batter + stir to combine.

- Fill each cupcake pan 3/4 with batter. Top each cupcake with some raw crumble and then put in the oven to bake.
- Bake for 20 - 25 mins. Wait for them to cool a little, then proceed scoffage.


Dark Chocolate Avocado Fudge

You will need:
1 ripe avocado
1/2 cup margarine
1 tsp vanilla essence
1 cup of cocoa
~3 cups of powdered sugar
1/3 cup chopped walnuts *optional*

How to:
- In a medium saucepan, melt the margarine over low heat.
- Place scooped out avocado flesh in a blender or food processor. Add melted margarine, then puree until perfectly smooth.
- Return mixture to saucepan, and over very low heat, stir in vanilla essence. Sift in cocoa powder.
- Add sugar a portion at a time, stirring. Be sure to taste as you add- I didn't need to add all of the required sugar as I like the darker chocolate taste.
- Once the sugar is stirred in, the mixture should be thick. Add walnuts, if you choose.
- Transfer mixture to a loaf pan and refrigerate until firm, Be patient, you won't be able to cut the fudge into squares if you don't let it firm up!

  1. What sort of flavour does the avocado fudge have? Is the avocado super noticeable?
